Michigan Chicken with Spinach

Soak chicken in milk to make it tender. This is a restaurant secret, not specific to this recipe but it is really nice in this recipe because it just MELTS in your mouth.

Mix together and coat chicken in:
1c bisquick
1t salt
1t paprika
1/4t pepper

Mix together in baking dish:
1/4c butter
1/4 oil

Place coated chicken in pan and turn once so it is covered in oil/butter.
Bake 350. Spoon drippings over chicken when half done.
Can use huge pieces and slice after cooking which makes it a wonderful recipe to do for a large crowd. I did it for a RS dinner a few years ago.

Serve with rice. Take some of the goop from the bottom of the pan and mix it into the rice.
In the picture I did the same thing but with spinach instead of rice. I could eat an entire bag of frozen spinach this way. Delicioso!
